I like big buts I cannot lie, and who doesn’t? We’re talking about large halibut here ( Hippoglossus stenolepis). That’s what they’re commonly called in Alaska. Halibut are very large flatfish that can reach almost nine feet in length and weigh up to 500 + pounds. Even yours truly has landed a 143 lb. specimen once upon a time. Halibut can live to a rip old age of 55. The problem is that the truly big ones are usually the old breeding females, so the conscientious sports angler really should release them. Besides the big ones don’t quite have the texture that the younger ones do, and just don’t taste as good.
